POTATO-STUFFED KULCHAS ---------------------- [bread pockets stuffed with potato/coriander mixture -- insanely great] Ingredients: dough: 2 cups all-purpose flour 1 tbsp dry yeast (= 1 package) pinch of sugar 1/2 tsp salt 1/2 to 3/4 cup warm water 2 tsp oil filling: 1 lb potatoes, boiled 4-5 green onions 3 tbsp coriander leaves, finely cut salt 1/2 tsp red chilli powder 1 tsp cumin powder 2 green chillis cut very fine finishing touches: 2 tbsp sesame seeds butter Directions: Dough: 1) Put yeast, warm water, sugar in a cup, and cover for 4-5 minutes to dissolve the yeast. 2) In a bowl, mix flour and salt (sift together if you're really keen). Add oil and dissolved yeast. Add warm water and mix to make the dough. 3) Coat inside of a bowl with 1/2 tsp oil, roll the dough around inside it (to coat dough with oil), cover and let sit ~1 hour till risen. Filling: 4) Boil potatoes 15-20 min. Remove the skin and mash potatoes. 5) Add salt, red chilli powder, cumin powder, green onions, and coriander leaves. Mix well. Combine: 6) Make 10 balls from the dough (about golf-ball-sized). Flatten balls out a bit, and put stuffing in the centre of the flattened dough ball. Use more than you think is reasonable; you should *just* be able to stretch the dough around the filling -- if it's too easy, you probably didn't use enough filling. 7) Dust filled doughballs with flour and roll out into oblong shapes about 1/4 inch thick. Wet a few fingers and use them to press sesame seeds onto the kulchas. 8) Heat oven to 450 F and bake kulchas for 7-8 min. Then broil them until brown specks appear on the top. Rub butter on hot kulchas and serve immediately.
